I’m attending a wine dinner and listed on the menu is roasted chicken breast served with whipped potato, hari covert and served with red pepper coulis. I have never heard of hari covert. Does anyone know what it is?
Haricot verts are french green beans.
It’s acutally “haricot vert”
FRENCH STRING BEANS “HARICOT VERT”
2 lbs. fresh string beans
Clean string beans and cut to 2 inches in size. Boil until just tender (do not over cook).
Simmer 6 cloves of garlic (minced) in 1/3 cup good olive oil. Toss with cooked beans. Salt and pepper to taste. Can be served either hot or cold – Bon apetite!

I found this spelling on my office cafeteria’s Thanksgiving dinner menu and pointed it out the to new food services manager. He told me it was the correct spelling and he’d been doing it that way for 20 years!
