there is no scientific name for a product that is used in food industry. if you were to try a more elevated name for butter you would call it an emulsion of animal fat extracted from animal’s lactofore glands. is that better? :o)
Butter is butter, but fat consists of lipids – long oily hydrocarbon chains.
